Cottage Cheese Pancakes


Our manager in the BYU Skyroom used to make us cottage cheese pancakes sometimes when we were really lucky!  It is my favorite low carb breakfast.

1 C Cottage Cheese (not packed)
3 Eggs
2 T Oil
1/3 C Flour (I use almond flour for low carb)

Blend in a blender (I use the Magic Bullet) and cook on a griddle.  I like to serve with whipped cream and strawberries or baked apples and cinnamon.  Makes 4 large pancakes.
