Carrot Ginger Dressing aka sugar-free, raw healthy dressing or dip

Carrot Ginger Dressing

2 carrots- peeled, coarsely chopped
2 shallots
4 TBSP ginger- peeled, finely chopped
4 -10 TBSP Olive oil
4-10 TBSP water
1 TBSP rice vinegar
4 TBSP light miso paste

Put everything in the bender. Serve on salad or dip veggies into it.

Yum yum.

I got the general recipe from GOOP but miso was the fanciest ingredient that I had in the house so I used olive oil to fill in for everything else.
